Preheat oven to425 degrees.

 

8 cut up chicken pieces

8 medium potatoes quartered ( many prefer to peel their potatoes but many vitamins and fiber are in the peels, if you choose to use unpeeled just wash well )

1/2 cup extra virgin olive oil

1 cup fresh lemon juice ( meyer lemons are fantastically flavorful )

 

Place chicken & potatoes in a large baking, season very generously with the Piquant Lemon Passion spice blend.  

 

Mix together olive oil & lemon juice in a seperate bowl to insure thorough mixing, pour over the chicken and potatoes . Cover dish with foil and bake for approximately 30 minites at the stated 425 temp.

 

Increase oven temp to 475 & remove  foil.  Cook until chicken & potatoes are a cooked well and have turned a beautiful golden brown , approximately 30 minutes or so.  May turn chicken pieces & potatoes occasionally to brown all sides if desired.
