1 lb lean ground beef

2 - 3 garlic cloves

1 medium finely chopped onion 

1/3 cup mango chutney

2 TB soy sauce

1 - 2 tsp Garam Masala spice blend

1 pkg ( 12 oz ) Asian crunch salad mix ( suggestion: Fresh Express brand  from Safeway or other grocery stores )

1/4 cup canned coconut milk

12 Bibb or Boston lettuce leaves

1 ripe ( medium sized ) mango peeled and sliced

 

Serves 4

 

Cook ground beef,( breaking up into crumbles ) onion & garlic in large skillet until well done   ( no pink in meat and onions tender ) at that point stir in chutney, soy sauce & garam masala spice blend  mixing well. 

Add salad mix, reserving flavor packets ( should be 2 one crunchy topping and one flavored sauce, set these aside ) which are in this salad mix and stir until slightly wilted. (approximately 5 mins or so. ) 

Combine coconut milk with reserved flavor packet from salad mix and mix well until mixture is smooth.

Spoon ground beef mix into lettuce leaves sprinkle with reserved crunchy toppings from salad mix and then drizzle coconut milk mixture and spoon mango over top of each serving.
