New addition to my spice blends is one with a history with the flavorful tastes of Mexico. You may not think cocoa has any place as a spice for meats but you will be pleasantly surprised at this. Many cooks are familiar with the savory flavor of cocoa in the kitchen but many are not. This is mixed with a medium spicy blend of cumin, coriander, and many other delicious spices.
The cocoa itself is 100 % organic cacao and on its own has a raw bitter taste but you will find it melds very nicely when mixed with the other spices and hits the heat. When roasting or grilling chicken or pork rub some of this delectable spice blend into pork or skin of the chicken about an hour before cooking time and be set for a taste sensation.
